Teriyaki Chicken Salad


 I love Friday afternoons.

After a busy week of video conferences, phone calls, business development meetings, (all while juggling a 3 year old) Fridays are my beacon of light.

My hottie hubby and I have a standing rule that no work-related appointments happen over the weekend. So, Friday nights mean a forced retreat from the social media world. It’s not always easy but I’ve learned to appreciate him pulling me away from the world and back into our cozy space.

I also have a little more time to put into Friday night meals so I had grand plans to make the Teriyaki Chicken Skewers from My Natural Family last night.

I just knew that we had wooden skewers at home.

Yea… we didn’t. Time for a little improv!

I loved the idea of making my own teriyaki sauce so I still followed the recipe closely to make the marinade and it was delicious.


The teriyaki chicken was made more perfect on a salad made with homegrown romaine lettuce, bacon, cranberries and avocado. A side of freshly cut pineapple brought it over the top.
