Watermelon, Avocado and Grape Salad

December is going to be awesome! A few friends of mine are joining me in a 30-day fruit and veggie extravaganza! We are combining the RawTil4 idea with the guidelines of Transform30. Basically, we will be eating over 50 plants each and every day! It may seem like a lot but 40 of those plants come straight from our Juice Plus capsules and shakes and the rest come from fresh, raw produce.

Here is a wonderful refreshing salad I made this afternoon to keep my energy up:

Watermelon, Avocado and Grape Salad

What you’ll need:

2 cups of chopped watermelon

1 small Hass avocado, seeded and chopped

1 cup of sliced grapes

1/2 stalk of celery, diced

1 tsp of apple cider vinegar

Dash of salt

Dash of pepper

Parsley for garnish

How to put it together:

Mix the first four ingredients together. Add the apple cider vinegar and season with salt and pepper. Top with parsley!
