Dinner Menu: Lightened up Comfort Foods

Happy Sunday! Part of my Sunday ritual is getting the next week of meals planned out and prepping my snacks and protein. I’ve gotten in the habit of cooking 4-6 chicken breasts in the crockpot to have shredded chicken on hand throughout the week – they make last minute meals so easy! I also like to have cut veggies on hand so that is next on my to-do list today.

However, I wanted to share this little dinner menu with all of you. I’m constantly trying to find a balance between my healthy eating habits with my hottie hubby’s standard of taste and variety. :-) This week will be filled with a few lightened up versions of his favorites with some veggie-heavy meals tossed in. I hope you get to try a few of these recipes along with me!
