Pumpkin Protein Donut with Pumpkin Icing

I found this awesome pumpkin protein donut recipe online at Worth Every Chew but of course, I had to sub in my favorite whole food, healthy protein! The cinnamon pumpkin taste is out of this world!

4 scoops Juice Plus Complete French Vanilla

1 tsp baking powder

1 tbsp cinnamon

1 tsp nutmeg

1/2 cup pumpkin purée, room temperature

3 egg whites, room temperature

2 tbsp coconut oil, melted

1 tbsp canola oil

Preheat oven to 350 degrees. Combine the dry ingredients in one bowl. Combine the wet ingredients in another – make sure the wet ingredients are all at room temperature or they will harden the coconut oil.  Mix the two bowls. It will be pretty thick. Spoon into a greased donut pan – since the batter is so thick, there will be peaks at the top unless you smooth them down. Bake for 15 minutes. They are done when a toothpick inserted in the middle comes out clean. Let cool in pan for a few minutes and then remove.
